This 21 day fix summer veggie soup couldn’t be easier. Unfortunately I have one of those awful summer colds and wanted something soothing. I also have a ton of garden veggies and this is a great way to boost my veggie intake and use them up. It’s an all around win-win!
- 1 box of veggie or chicken stock (32oz)
- 21 day fix Southwest seasoning mix (a similar seasoning would be Cajun)
- Lots of veggies…. any combo you’d like
(I used 2 carrots, 1 cup of corn, 1 yellow squash, 1 zucchini, 2 stalk of celery, 2 roma tomatoes, green beans, 1 shallot)
I started by heating up the crockpot and browning up the shallot. While that was warming up it’s time to get chopping!!!🌽🍠🍆
Toss in your veggies, box of stock, and about a 1tbsp of the southwest seasoning mix. This will vary a bit to taste depending on your veggies and the stock. So start with less! You can always add more 🙂 I did make mine more spicy. 🌶
***if you don’t follow 21 day or don’t have the spice blend Cajun spices are similar.
Let it cook on low for about 4 hours. Of course, if you don’t want to use a crockpot you can simmer it on the stove until the veggies are tender.
It made a lot, which was great! The southwest seasoning has a spice to it and really warms the tummy 🙂 I’m so glad I gave this combo a try. It’s perfect to help boost your veggie intake. Sometimes getting in 4 greens can be hard- lol. I will definitely be making this again and I can see it being a “go to” during the colder months too- yay!
