It’s all about meal prepping and eggs can be a little tricky. These are the two methods that I’ve tried, tested, and continue to use. I’m big on meal prepping because my schedule is pretty inconsistent, which means my meals & snacks fall into the category of “when it’s convenient.” Not a good practice, I know! So, grabbing a couple of eggs on the way out is pretty darn handy. And it’s not that they are too time consuming to peel, but the convenience for when I’m feeling rushed is a great peace of mind and helps keep me on track. 🙂
First method: Simply peel your eggs, place them in a bowl filled with cold water, cover and place in the fridge. This is the best method! The eggs keep for days and being submerged in water stops them from getting tough, dry, etc.
Second method: Place the peeled eggs into an airtight container or baggie, cover with a damp paper towel, and seal well. I use this method a little less, but it works great for lunch totes, etc.
Well that’s it! It really is that simple 🙂 And if you are prepping a few eggs don’t put those shells in your trash. You can add them to your garden or pots to help feed and protect your plants. 🌿
